This vegan cheese soup base is so freaking good that I HAVE to share the recipe with you!
I’m not vegan. My husband isn’t vegan, and we both love this soup. It’s creamy. It’s cheesy. It’s delicious and nutritious!
When a friend recently shared her recipe with me for a vegan Alfredo pasta sauce, I got curious and creative. I modified it a little bit and voila, a soup base from heaven!
There are so many ways you can get creative with this soup too! Add more veggies to increase the fiber (which is great because most people do not get enough veggies OR fiber daily).
Fit and healthy tip: Fiber can aid in weight loss and maintenance because it can curb your appetite by helping you feel full, and it helps dispose of estrogen to keep you in fat-burning zone.
Cheesy Vegan Soup Recipe For A Fit, Healthy And Lean Body
Enough here for one person for a meal. Make a triple batch or more if you are feeding others or want leftovers. It’s even creamier the second day!
Saute’ till brown:
- 1t. olive oil
- 2 cloves garlic
Add and bring to boil:
- 3/4 c. unsweetened almond milk
- 1c. chopped cauliflower for about 7 minutes till soft (don’t over do this step!)
Transfer to Vita-Mix or blender and add:
- sea salt and pepper to taste
- 2 heaping T nutritional yeast
- juice of half a lemon (don’t over do this ingredient)
Blend. Voila! Devour.
Getting Creative With This Vegan Cheese Soup
The first night I made the soup for my husband and I I added sautéed garlic, onion and zucchini. I also added some homemade turkey sausage spiced with herbs from our garden and pasta. Delicious! Topped it with fresh cilantro. BOMB!
I’ve also added steamed broccoli for a “broccoli cheese soup”. Amazing!
And yet one more way I mixed this up was by roasting poblano peppers and a jalapeno. Peel the skins. Then, blend with an avocado and some water until you have a thick pudding consistency. Add a big dollop of this to your soup for a spicy, creamy amazing mouth-gasm.
